When your time is precious, a little cheating in the kitchen will go a long way. Here is a simple and fast idea for a bundt cake that is sure to impress your friends. Why bundt?
Just because of the hole in the middle. Bundt needs no icing and is super easy to decorate.
Always have a box of cake mix in your cupboard. Any no name cake mix is as good as the other stuff. Betty C. and Duncan H, are much overrated and overpriced.
Lemon cake has a rich yellow colour and a tart taste that most people like. If you happen to have a fresh lemon on hand, grate some of the zest right into mixed cake batter. This will add that "made from scratch" taste.
Pour the cake batter into the bundt pan and bake according to the instructions. Always use a long toothpick to check if the bundt is fully baked.
During the baking time get a funky plate for your cake and look around for some flowers. In the Spring/ Summer, you can pick any wild flowers or grasses or purchase a small bunch at the local market. In the Fall, some freshly fallen colourful leafs will be great sprinkled with icing sugar and in the Winter use any of the available evergreen foliage.
Once the cake is baked, let it cool for few minutes and take it out from the bundt pan and place onto your nice plate.
Cut the flower stems so that you can stand the flowers inside of the bundt.
While the cake is still warm, sift some icing sugar over it. Some sugar will melt, but the next layer will stay powdered.
